From the highest vineyards of Vallagarina valley we select the best Chardonnay grapes for the basic wine. We make a second fermentation in bottle at controlled temperature to fulfill the parameters for the traditional Champagne method. After 24 months in bottle, we give a small quantity of “liquer d’expedition”. This sparkling is of a light yellow with golden reflexes, his perlage is filigree and persistent. Fruit notes are combined with sweet yeast and bread notes. Tasting fresh, full, balanced, long lasting and elegant.


VINEYARDS: selected vineyards around the village called Volano with small harvest.
TRAINING METHOD: traditional Trentino-Pergola (trellised vine)
VINES PER HECTARE: 3.200 to 3.500 vines per hectare

WINE DESCRIPTION

COLOR: pale yellow with golden reflexes highlighted by the fine perlage
FLAVOR: fruity bouquet with bloomy notes and a light touch of yeast
TASTE: lively, harmonic, dry, fresh, fullbodied and structured
PAIRING: to all dishes, mostly fitting with fish entries and crustaceans
